While this rich vegan chocolate mousse consists of nothing but nourishing whole foods, it tastes even better than a chocolate mousse! As my husband put it: “it’s like Ferrero Rocher that’s good for you”.
This chocolate mousse is naturally sweetened with dates and consists of only 5 ingredients:
- Canned coconut milk (ideally full-fat)
- Coconut oil
- Dates
- Unsweetened cocoa powder (I’m a big fan of Valhrona and Cacao Barry)
- Unsalted raw cashews
Tips on how to make the best vegan chocolate mousse:
- Like with all things pastry, I highly recommend using kitchen scales to measure the ingredients.
- Garnish your mousse with hazelnuts and unsweetened coconut chips. This will make it taste very much like Ferrero Rocher bon bons;)
- The key is to blend all of the ingredients until they reach perfectly smooth consistency. With some blenders it may take longer than you think, but please be patient and wait until the mousse it reaches the right texture!
- I always emphasize the importance of using high-quality cacao powder. Make sure it’s not stale and try using brands, known for their high quality such as Valrhona, Green & Black’s, Camino etc. Since cocoa is the main flavoring agent of the mousse, it will determine it’s final level of delicousness.
- Always use canned coconut milk! (as opposed to the one in refrigerated section). It has much better texture for dessert and baking purposes and usually only has 1-2 additives (as opposed to 5-10 in the refrigerated coconut milk).
